I have recently overhauled this page by adding the declarative methods of managing Flatpaks : https://wiki.nixos.org/w/index.php?title=Flatpak&diff=24096&oldid=19825

Thereby, [https://nixos.org/manual/nixos/stable/#module-services-flatpak the NixOS manual] should probably be synced
